Sunday - Pizza

Our pizza crust and sauce recipes can be found here. We made one pie with fresh mozzarella, onions, ground beef, broccoli, and olives; one plain mozzarella; and one with peppers, onions, pepperoni, and olives. We also had salad.



Monday - Easy Hamburger Stroganoff

I like to serve this quick ground beef dish over wide egg noodles. We had zucchini sauteed with peppers, onions, salt and pepper, and Italian seasonings as our side.


Easy Hamburger Stroganoff

1 lb. ground beef
1 yellow onion, sliced thin or diced
1/4 tsp. salt
1/2 tsp. garlic powder
1/4 tsp. black pepper
1 10.5 oz. can condensed cream of mushroom soup, or homemade substitute 
4 oz. can of mushrooms (optional)
1/2 c. sour cream
1 T. tomato paste 

In a skillet, brown ground beef with onion until cooked through. Season with salt, garlic, and pepper. Stir in mushroom soup, mushrooms (if using), tomato paste, and sour cream. Allow to simmer together for a few minutes until sauce is well blended and heated through. Serve over noodles. 

Tuesday - Skillet Vegetables and Penne



A repeat of Monday from week 1, with a picture! For this speedy dinner I saute onions, bell peppers, a few cloves of minced garlic, chopped Italian chicken sausage, and broccoli in olive oil until the onions and peppers are soft, the sausage is nicely browned, and the broccoli is crisp-tender, then toss it all with cooked penne and about 1 oz. of cream cheese. I finish by seasoning with salt, black pepper, basil, and red pepper flakes to taste, and topping with freshly grated Parmesan. A salad goes nicely with this, but I just heated up some canned beets on this particular evening. 

Wednesday - Instant Pot Cabbage Roll Stew

I followed this recipe for these deconstructed cabbage rolls, and served with some freshly baked 5-minute artisan bread and steamed green beans.



Thursday - Chicken & Veggie Fried Rice and Cucumber & Onion Salad

Cucumber and onion salad, sometimes called refrigerator pickles, is just as good at a summer BBQ. We make tons of this salad when our garden is producing cucumbers, and my toddler loves it. Combine 1 cup each of water, sugar, and white vinegar, 1/2 tsp. salt and 1/4 tsp. pepper, stirring until the sugar is dissolved. To the liquid add 1 large onion, sliced thin, and 2-3 thinly sliced cucumbers, peeled or not according to their kind. Allow to sit at least an hour before serving with a slotted spoon.

Friday - Slow Cooker Chicken Fajitas 

My oldest daughter and I weren't at home for dinner on Friday, but I prepared this chicken for the rest of the family to enjoy in tortillas with rice, cheese, lettuce, sour cream, salsa, and cucumbers. Recipe can be found here.
