Spinach and Feta Turkey Burgers


So colorful, so delicious, so packed with flavor, spinach & feta turkey burgers and all their fixings are a tasty and welcome change from ubiquitous beef patties. We start with a hearty whole-grain roll and spread the bottom half thickly with roasted red-pepper hummus, and drizzle some homemade Absolutely Fabulous Greek House Dressing onto the top half. On top of the hummus, we sprinkle a little extra Feta cheese, layer in the grilled burger, then top it with zesty Peppadew peppers (a South African pepper that is right at home with these Mediterranean flavors, trust me), Kalamata olives, and lettuce. But first, you need to make the burgers. These specialty burgers are sold in packages of two for nearly $3 PER patty at my local grocery store--that's a nope. Let's get our hands messy instead! 


My recipe is based on Spinach and Feta Turkey Burgers from AllRecipes.com.

Makes about 8 Spinach & Feta Turkey Burgers:

1 egg, beaten
2 cloves garlic, minced
4 oz. Feta cheese
3-4 oz. fresh baby spinach, chopped small
2 pounds ground turkey
2-3 T. seasoned breadcrumbs

Mix the ingredients together in a large bowl until well combined; form into equal patties. If grilling, freezing the patties beforehand will help them keep their shape while cooking. (I separated them with parchment paper and froze them on sheet pans before transferring to a Ziploc.) Oil the grill well and take care when turning them. You can also pan fry them in olive oil.

I highly recommend the condiments and toppings I mentioned; the layers of flavor are incredible. Choosing a substantial roll or pita is important to stand up to the dressing without becoming soggy. I also served these alongside Israeli Salad, a fresh mix of vegetables that is stunning when made with perfectly sweet and ripe garden produce. We like cilantro rather than parsley; some recipes suggest a mix of the two, or mint. In my photo you'll see the juice from the salad running all over the plate--that just got mopped up with the burger and my mouth was happy. I hope yours will be too!
